Make Mother’s Day around the Table

This Mother's Day we are getting behind the simple idea of bringing the family back together around the table, yours or ours. Craft the perfect dinner, lunch or breakfast for the most important lady in your life and bring the family around the table.

The Menu

Mum deserves best so weave your way from farmgate to farmgate through the Bundaberg region picking up the freshest produce on hand.

For Entrée

Prosciutto Wrapped Figs
(Serves 4)

Ingredients
4 slices of Barritt's Butchery's award-winning Pancetta
4 medium-large fresh figs from Alloway Farm Market
100 grams of goat's cheese

Method
1. Preheat oven to 200OC
2. Cut a small slice in the bottom of the figs and shove a knob of cheese into the middle of the fig.
3. Wrap pancetta around the fig and secure with a toothpick.
4. Place on baking tray and cook until pancetta is crispy – 8 – 10 minutes. Remove and allow to cool for 5 minutes before serving.

Roasted Whole Barramundi with Ginger and Soy Dressing
(Serves 4)

Ingredients
1kg-1.5kg whole barramundi, cleaned from Grunske's by the River Seafood Restaurant & Market
4cm piece of Bunda Ginga ginger, peeled, cut into very thin strips
2 garlic cloves
2 long red chillies from Austchilli, seeds removed, cut into thin strips
2/3 cup soy sauce
1 Tbs rice vinegar
1 Tbs sesame oil
1 Bundy Lime

Method
1. Preheat oven to 200OC.
2. Place 3 cuts on each side of barramundi and put in an oiled roasting pan. Brush fish with a little extra oil and sprinkle with salt. Roast in oven for 25 minutes or until fish flakes away easily from the bone.
3. Meanwhile, sauté ginger, garlic and chilli together in a small saucepan over a medium heat until slightly softened. Add soy, vinegar and sesame oil and stir until warmed through.
4. Place fish on a platter, pour over the hot ginger, garlic and chilli dressing and serve with a wedge of fresh Bundy Lime. A perfect dish for sharing.

Sweet Potato & Avocado Salad
(Serves 4)

Ingredients
500g Windhum Farm's Sweet Potato (Pick up from Drive Thru to the Lettuce Patch or Beemart)
1 garlic clove
1 tbs olive oil
1 bag of rocket from Drive Thru to The Lettuce Patch
2 Avocadoes from Drive Thru to The Lettuce Patch

Dressing
2 tbs olive oil
2 tbs apple cider vinegar
2 tbs of lime juice from a fresh Bundy Lime
Bundy Limes salt and pepper

Method
1. Cut sweet potatoes into wedges and toss in olive oil and garlic. Roast in oven at 180OC until cooked through.
2. Mix olive oil, apple cider vinegar, lime juice and salt and pepper together to make dressing.
3. Mix rocket, sliced avocado, roasted sweet potato and dressing together and serve.

 

For Dessert

Chocolate Macadamia Rum Tart
(Serves 8)

Ingredients
200g pkt Arnott's Teddy Bear biscuits
110g of dry roasted Macadamia's Australia macadamia's
80g unsalted butter, melted, cooled
1 tsp ground cinnamon
300ml thickened cream
300g dark cooking chocolate
2 Tbs Bundaberg Rum Blenders Edition
Honey Roasted Macadamia's Australia
Double cream

Method
1. Grease a 34 x 11cm tart tin with butter. Line a baking tray with baking paper.
2. Process biscuits, macadamias, butter and cinnamon in a food processer until well combined. Press firmly press into tart tin base and over the sides. Place in freezer to chill for 20 minutes.
3. On a low heat, mix the cream, chocolate and rum in a saucepan until smooth and combined. Set aside for 10 minutes to cool slightly. Pour into biscuit base and place in fridge for 6-8 hours until firm.
4. Top tart with honey roasted macadamia's and double cream.

 

The Setting

Dine at Mum's place or yours, the beach or at the river. Book in to our beautiful beachfront accommodation  and give Mum a full weekend away or head down early to grab a picnic table along the foreshore. Not a wiz in the kitchen? Have Mother's Day at one of our beautiful local cafes and restaurants.

The Extras

No Mother's Day is complete without flowers so make sure you pick up a beautiful bunch of locally grown flowers from Robertson Flower Farm. Mum will also love you for her bottle of exclusive Pink Gin from Kalki Moon made with Elderflower and Rose or go all out and book her a trip to Lady Musgrave Island (perfect for Mum's looking to get away and relax for the day!).

Whatever you do, wherever you go, whatever you eat – do it with love and family around the table.
